The Best Homemade Restaurant Style Vegetarian Refried Beans

Instructions

1. Rinse dried beans and pick through them to remove any grit or bad beans.
2. Place dried beans in a big bowl and cover generously with filtered water. Make sure that beans are completely submerged, with at least 1" of extra water above the beans, as beans will expand a lot as they soak.
3. Add apple cider vinegar to dried beans and water, cover the bowl and leave to soak for at least 12 hours.
4. Once beans are done soaking, drain off the water and rinse the beans thoroughly, then add to instant pot with two cups of water - do not add salt while beans cook, as the salt will prevent the beans from getting soft. 
5. Set instant pot pressure to high for 60 minutes and allow the beans to cook until soft. Once beans are done cooking, release pressure until you can safely open and check to make sure that beans are thoroughly cooked. If they are still al dente or a little bit hard, add more cook time - it's very important to make sure that the beans are very soft before proceeding.
6. Once the beans are well cooked, carefully pour them into a blender while still hot, along with the salt and butter and all of the water that the beans cooked in.
7. Blend until smooth and add salt to taste, if necessary. Allow the beans to cool until they are safe to eat, serve and enjoy!
