2 Cups Dried beans - I like doing 1 cup of pinto beans with one cup of black beans
1 Can Diced tomatoes
1 Can Diced chili peppers
2 Cups Water + more to soak beans
1 tsp Onion powder
1 tsp garlic powder
1 tsp salt
¼ tsp cayenne pepper
1 ½ tsp cumin
1 tsp paprika
1 tsp chili powder
Instructions
Place beans in a large bowl and pour about a tablespoon of apple cider vinegar into the bowl, making sure the beans are completely submerged, with a couple of inches of water above the beans. If the beans soak up all of the water, add more and keep soaking, preferably for at least 12 hours.
Once the beans are finished soaking, drain the water and rinse the beans out thoroughly.
Place the beans into Instant Pot, along with 2 cups of water, tomatoes, chili peppers and all seasonings except the salt. Adding the salt now will make it harder for your beans to soften completely while they cook, so I highly recommend waiting until after the beans are done cooking to add the salt.
Cook on medium pressure for 50 minutes and then release the pressure. Remove the lid and add the salt. Allow to cool and serve with some fresh, warm cornbread. Enjoy!
