Combine all dry ingredients in a large bowl and mix thoroughly.
Mix the soy sauce with the hot water and add to the bowl with the dry ingredients. Mix well and let it sit for 5 minutes.
Crack eggs into a separate bowl and whisk thoroughly, until eggs start looking foamy.
Add the whipped eggs and oil to the bowl with the gluten flour and other previously dry ingredients and mix well.
Add a bit of oil to a pan and preheat pan on medium heat. Form your sausage mix into patties - it will be very soggy and sticky, not at all a dough texture. I use a small melon ball scoop to scoop a generous tablespoon of the mix into the pan, spray the stop of the ball with a bit of oil and then press down with my spatula to press the ball into a patty.
Cook on each side until golden brown and let it cool a bit before eating.
